Labor Day Weekend Campfire Cooking Pictures
Labor Day weekend did not work out how I planned. We were supposed to go camping but a knee injury that has me forbidden to walk up and down steps or to do much walking at all right now, kept the camper in the driveway and me at home, feeling cranky and crabby.
It was hard to sit at home and look outside at the gorgeous weather, thinking about how other family members were enjoying their camping trip while I was stuck home sitting in a recliner with my leg propped up and a bag of ice on my knee.
By Sunday I was ready to go crazy so my husband helped me pack some food and a footstool for my leg, and we headed to the campground to join the rest of our family. It was a fun day filled with lots of laughs, very slow walks to the bathroom for me, a couple of card games, a few cold and frosty mango margaritas, and a feast of a meal.
When 6 pm rolled around and everyone started to get hungry, lots of food started to appear. My contribution to the meal was 2 pots of dutch oven lasagna and a cheeseburger dip. We also had, 3 pizzas over the fire, bacon wrapped water chestnuts cooked over the fire, fire grilled garlic bread, dutch oven peach cobbler, dutch oven cherry cobbler, sliced tomatoes, and green beans.
Yes, it was a huge amount of food but there were also 27 people to feed which meant most of the food disappeared pretty quickly. By the time my husband and I left the campground at 9:30 pm all that was left was a little cherry cobbler and couple of stray green beans.
My sister-in-law kindly took a few pictures for me to share with you since I forgot my camera.
It was great spending time with family, but it was also hard to head home because I really wanted to stay and fall asleep to the sound of the cicadas singing and the leaves of the trees rustling in the breeze.
But I guess I should be grateful that I got to go for half a day.
Now I need to completely behave and follow my doctors orders so that I can be walking decent by the time we go on our annual fall camping trip to Peninsula State Park in Door County, Wisconsin at the end of September/beginning of October.
