Campfire Recipe: White Bean and Chicken Bruschetta Bake

When I go camping, I desire to eat something wholesome and good to eat.  While I try really hard to avoid the quick heat and eat approach, this dish is a combination of both.  Yes, it uses canned food and precooked chicken but I can still keep the wholesomeness of this dish by precooking my chicken.  This can occur at home or simply cook an extra one for a cook once eat twice dish.  If decide that you do not want to cook your own chicken, just pick a rotisserie one on the way to camp.

Campfire Recipe:  White Bean and Chicken Bruschetta Bake

Ingredients

Spray or liquid oil

19 ounce can of white beans

14.5 ounce can of tomatoes with Italian herbs and garlic

2 to 3 cups of cooked chicken cut up into 1 inch pieces

1 Tablespoon Balsamic vinegar

½ teaspoon of salt

11 ounce can of pop and bake breadsticks

8 ounce package of shredded Italian cheese

½ teaspoon of dried basil leaves

1 Tablespoon chopped fresh parsley, optional

Steps

  1. Prepare the coals by building a fire.
  2. Using a 12 inch Dutch oven, spray or wipe down the inside of the Dutch oven with oil.
  3. Drain and rinse the beans and place in a large bowl.
  4. Drain the tomatoes and add to the bowl.
  5. Stir into the bowl the balsamic vinegar and salt.
  6. If the chicken has not been processed, cut into 1 inch long pieces and add to the bowl.
  7. Pop open the can of breadsticks and separate them.
  8. Cut each breadstick into four pieces.
  9. Place ¼ of the cut breadsticks into the bowl and stir.  Repeat until all the breadsticks have been mixed in.
  10. Add one cup of cheese and stir.
  11. Pour into prepared 12 inch Dutch oven and smooth the top.
  12. Place the lid on the Dutch oven and move to a heat resistant surface.
  13. Arrange 12 prepared coals in a circle on the heat resistant surface.
  14. Place 12 inch Dutch oven on top of these coals.
  15. Put 16 coals around the outer part of the lid.
  16. Add 10 prepared coals to the center.
  17. Bake for 30 minutes.
  18. Once the time has passed, remove the lid and top with remaining cheese.
  19. Cook for another 10 minutes.

Serve.
