Campfire Recipe: Pumpkin and Cherry Upside Down Cake

If you are looking for something that is a little different for dessert while you are camping then search no more.  This recipe is wonderful for anytime of the year and is especially great when the fall and winter winds blow through the campground.

Campfire Recipe:  Pumpkin and Cherry Upside Down Cake

Ingredients

Liquid or spray oil

1 10 to 12 ounce jar of cherry preserves

1 cup dried cranberries

1/3 cup of butter

2 cups all purpose flour

1 ½ teaspoon baking powder

1 ½ teaspoon pumpkin pie spice

½ teaspoon baking soda

1 stick of butter

1 ¼ cups of granulated sugar

1 teaspoon of vanilla

2 eggs

½ cup of canned pumpkin

¾ cup of buttermilk

Steps

  1. Build a fire to prepare the coals.
  2. Lightly grease a 10 inch Dutch oven with spray or liquid oil.
  3. Measure out parchment paper so that it fits inside the 10 inch Dutch oven.  Once done, lay it down inside the Dutch oven.
  4. Place a grilling rack over the fire.
  5. In a small saucepan, mix cherry preserves, dried cranberries, and 1/3 cup of butter.  Stir over the fire until the mixture comes to a boil. 
  6. Pour the mixture from step 5 into the 10 inch Dutch oven and smooth over.
  7. In a medium bowl, mix flour, baking powder, pumpkin pie spice, and baking soda.  Set aside.
  8. In a large bowl, add ½ cup of butter and beat for 30 seconds.
  9. Add sugar and vanilla.  Beat until combined.
  10. Add one egg to step 9 and beat.  Repeat with the other egg.  
  11. Add pumpkin to mixture in step 10 and beat.
  12. Add half of the flour mixture and buttermilk to the mixture in step 11.  Beat.  Repeat until all the flour and buttermilk has been added and mixed.
  13. Carefully spread the batter on top of the layer in the 10 inch Dutch oven.
  14. Place the lid on the Dutch oven.
  15. Move the Dutch oven to a heat resistant surface. 
  16. Arrange 10 prepared coals in a circle on the heat resistant surface.
  17. Place the 10 inch Dutch oven on top of the circle of coals.
  18. Top the Dutch oven with 18 prepared coals.
  19. Cook for 30 minutes.

Once the time has been reached, push a knife through the center of the cake to check the doneness.  If the knife does not come out clean, continue to cook for another 10 minutes.
