Campfire Recipe: Coconut Lime Berry Cake

Nothing beats a cake made with fresh fruit and this is especially true if you can pick your own or pick some up at the Farmers’ Market.  If you are not lucky enough to find fresh berries in season, do not worry frozen can be used.  The only trick using the latter is to make sure that the fruit is not thawed prior to mixing in the flour, sugar, and orange juice. 

Campfire Recipe:  Coconut Lime Berry Cake


Spray or liquid oil

1 ½ cup of unsalted butter at room temperature

1 ¾ cup plus 1 tablespoon all purpose flour

2 teaspoons baking powder

½ teaspoon salt

1 cup packed, sweetened shredded coconut

1 cup plus 1 tablespoon granulated sugar

3 large eggs

¾ cup of buttermilk

1 fresh lime

3 cups of mixed berries, such as blackberries, raspberries and/or blueberries

3 tablespoons orange juice



  1. Build fire to prepare the coals.
  2. Take a 12 inch Dutch oven and grease with spray or liquid oil.
  3. Cut parchment paper to fit into the 12 inch Dutch oven and line the Dutch oven with it.
  4. In a large bowl, combine 1 ¾ cup of flour, baking powder, salt, and shredded coconut.
  5. In another large bowl, beat together butter and 1 cup of granulated sugar.  Beat until fluffy.
  6. Add one egg at a time to the large bowl in step 5.  Beat to combine.
  7. Add 1/3 of the flour mixture from step 4 to the bowl in step 6.  Beat together.  Add 1/3 of the buttermilk and beat.  Repeat this process 2 more times.
  8. Zest the lime and squeeze the juice out.  Add 2 teaspoons of the zest and 2 tablespoons of the juice to the mixture in step 7.
  9. Pour batter into prepared 12 inch Dutch oven.  Smooth the surface.
  10. In a medium sized bowl, combine the mixed fruit, 1 tablespoon of granulated sugar, 1 tablespoon flour, and orange juice.
  11. Sprinkle fruit over the batter.
  12. Place the lid on top of the Dutch oven.
  13. Move the 12 inch Dutch oven to a heat resistant surface.
  14. Arrange 12 prepared coals in a circle on the heat resistant surface.
  15. Put the 12 inch Dutch oven on top of the circle of coals.
  16. Add 24 prepared coals to the Dutch oven lid.
  17. Cook for 30 minutes.  Once that time period has passed, stick a toothpick through the cake to check the doneness.  If it comes out gooey, cook for another 10 minutes.
