Campfire Recipe: 4 Can Baked Beans

Boy, what do you do when all of a sudden a bunch of people show up to your campsite?  Well, when it comes to eating you could excuse them during meal time on the premise that there is not enough food or………… can cook up a big pot of baked beans.  Beans themselves are quite filling and while the recipe below may not look like it would feed an army, it will provide healthy servings for several people.  This is especially true if it is combined with a meat.

Yes, this recipe is easy but it is just as easy to make it your own.  Consider all the varieties of baked beans out there.  Onion, and barbecue varieties are just to name a few but there is one that I would avoid and that is the sweet flavored ones.  Maple syrup or honey flavored baked beans will clash with the spiciness of the chili beans.

Campfire Recipe:  4 Can Baked Beans

Liquid or spray oil

16 ounce can of baked beans

15 ounce can of spicy chili beans

15 ounce can of black beans

14.5 ounce can of fire roasted tomatoes with chilies

  1. Build fire to prepare the coals.
  2. Grease the inside of a 10 inch Dutch oven with liquid or spray oil.
  3. In a large bowl, add the baked beans, and spicy chili beans.
  4. Drain and rinse the black beans.
  5. Add the black beans to the bowl.
  6. Add the fire roasted tomatoes with chilies to the bowl.
  7. Mix.
  8. Place the bean and tomato mixture into the 10 inch Dutch oven.
  9. Put the lid on the Dutch oven.
  10. Move the Dutch oven to a heat resistant surface.
  11. Arrange 10 coals in a circle on the heat resistant surface.
  12. Put the 10 inch Dutch oven on top of the circle of coals.
  13. Put 20 prepared coals on the lid.
  14. Cook for 50 minutes undisturbed.
  15. After the 50 minutes have passed, knock off the coals from the lid and move the Dutch oven off the circle of coals.
  16. Allow the beans to sit for 15 minutes before serving.  This will give the beans a chance to absorb the flavors.
  17. Serve.

As everyone knows, you cannot have a bean dish without cornbread.  So when it comes to serving up this dish, consider making a big batch of cornbread.  If not serving the 4 can baked beans with meat, add a little shredded cheese on top of the cornbread for flavor and additional protein.
