Camp Fire Recipe: Tater Tots Romanoff

When the weather cools down, this dish is perfect.  The cooler weather helps keep the dish cool overnight if your cooler is not ideally functioning.  As a side dish, it really goes with anything.  I have served this dish with fish, pork chops, ham, and even hamburgers.  To make this dish a little healthier, consider using low or fat free sour cream.  While I do not like soy cheese, you can also reduce the amount of fat in this dish by using soy cheese.

If you are not concerned about the fat, a great topping to add to this dish is some chopped, cooked bacon.  When do you add this topping?  Combine it with the ½ cup of cheese that you sprinkle on top right before the dish is ready to eat.

Finally, to really change up this dish, think about using flavored sour cream or dip and combine that with a complimentary flavored cheese.  As an example, think about using a flavored dip with hot pepper jack cheese.    

Camp Fire Recipe:  Tater Tots Romanoff

Ingredients

Liquid or spray oil

5 cups of tater tots

2 cups of sour cream

1 ½ cup of shredded cheddar cheese

5 to 6 green onions

Salt

1/8 teaspoon of black pepper

Steps

1.Using a large bowl, combine the tater tots, sour cream, and 1 cup of shredded cheddar cheese.

2.Chop green onions and add to the bowl in step 3.  Season with salt to taste.  Add black pepper.

3.Mix and place in the cooler or refrigerator overnight.

4.Build fire to prepare the coals.

5.Lightly grease the inside of a 10-inch Dutch oven with liquid or spray oil.

6.Pour the mixture that has sat overnight in the cooler into the 10-inch Dutch oven.

7.Place the lid on the Dutch oven.

8.Move the Dutch oven to a heat resistant surface.

9.On that heat resistant surface, arrange 10 prepared coals in a circle.

10.Put the 10-inch Dutch oven on the circle of prepared coals.

11.Place 20 prepared coals on lid.

12.Cook for 20 to 25 minutes.

13.Gently lift lid off after the noted time in step 12.  Add the remaining ½ cup of shredded cheddar cheese.  Place the lid back on and cook for another 5 to 10 minutes or until the cheese melts and begins to brown.

14.Once the cooking time has passed, knock off the coals from the lid and remove the Dutch oven from the circle of coals.

Serve.
