Camp Fire Recipe: Breakfast Queso Dip

Nothing brings them running like a dip. But…….I know what you are thinking. A dip for breakfast would not be hardy enough for the morning meal. Well, it can. The sausage and eggs provide plenty of protein. Combine this with the protein in the cheese and you have a hardy dish. The best part, you do not need a fork or plate to eat breakfast.

While I did say the literal “one dish” concept is what made this dish perfect, I have to add to that. I have found that standing around a cast iron skillet full of this breakfast is a wonderful way to start the day. It allows campers to share their plans for the day. Conversations abound over this dish more than plates full of food. So if conversation is lacking in your camping experience, give this dish a try.

Camp Fire Recipe:  Breakfast Queso Dip

Ingredients

8 ounces of Mexican chorizo sausage, if casing are involved remove

1 fresh poblano chili pepper

Medium yellow onion

4 large eggs

¼ teaspoon of salt

12 ounces of shredded Monterey Jack cheese (3 1/3 cups)

4 ounces of shredded extra sharp cheddar cheese (1 ¼)

2 medium scallions

Hot sauce

Tortilla chips

Steps

  1. Build fire and place grilling rack on top.
  2. Place large cast iron skillet on rack.
  3. Put Mexican chorizo sausage in skillet.
  4. Break up with spoon. Cover with aluminum foil. Cook for 5 to 8 minutes or until the sausage is completely cooked.
  5. Wash and core the poblano chili pepper. Cut into small pieces. Set aside.
  6. Mince the yellow onion.
  7. Add the poblano chili pepper and yellow onion to the sausage.
  8. Mix. Cover with foil and cook for 8 minutes.
  9. In a separate bowl, break the eggs into and add the salt. Beat until completely mixed.
  10. Add the eggs to the skillet.
  11. Let the eggs undisturbed until the edges begin to set.
  12. Stir the eggs and vegetables. Smooth the surface over.
  13. If you have bought block cheese, grate it. Once you have grated cheese, add it to the skillet.
  14. Put foil back on top. Cook until the cheese(s) is melted and bubbly. This will take about 5 minutes.
  15.  While the cheese(s) is melting, chop the scallions.
  16. Remove the skillet once the cheese(s) is melted. Top with chopped scallions.

Serve with hot sauce and chips.
