Camp Fire Recipe: Beet and Goat Cheese Tart

Well, beets are one of those vegetables that you either like them or you do not.  While I love beets, my husband does not but he does like an onion tart.  Below is a recipe for a tart that yes has onion in it along with other good for you ingredients.  When my husband tried it, he said it was good and he also said it was a great way to get him to eat his beets. 

So if you are surrounded by non-beet eating family members, give this dish a try.  It may become your family’s “favorite beet” dish.

Camp Fire Recipe:  Beet and Goat Cheese Tart

Ingredients

Spray or liquid oil

Parchment paper

1 tablespoon olive oil

1 large onion

1 refrigerator pie crust

1 jar of pickled beets

8 ounces of herb and garlic flavored goat cheese

Fresh thyme

Fresh grated lemon peel (optional)

Steps

  1. Start to prepare the coals by building a fire.
  2. Lightly grease the inside of a 12 inch Dutch oven.
  3. Roll out the parchment paper and cut it to fit the 12 inch Dutch oven.  Lay out on a flat surface.
  4. Thinly slice the onion.  Set aside.
  5. Place grilling rack above the fire and top with a cast iron skillet.
  6. Add the olive oil to this skillet along with the onions.  Cook and stir for 20 minutes or until the onions are soft and light brown.
  7. Once the onions are done, remove them from the grilling rack.
  8. Take the pie crust and unroll onto the parchment paper.
  9. Place the cooked onions in the center of the pie crust and spread out so that there is a 1 inch margin.
  10. Drain the beets and slice as needed.  Place the beets on top of the onions.
  11. Cut the goat’s cheese up into small pieces and sprinkle on top of the beets.
  12. Chop 2 tablespoons of fresh thyme and sprinkle on top of the cheese. 
  13. Roll the edges of the pie crust up over the onion and beets but leaving the center open. 
  14. Lift up the parchment paper and tart.  Place inside the 12 inch Dutch oven.  Top with lid.
  15. On the heat resistant surface, form a circle with 12 prepared coals. 
  16. Put the Dutch oven on the coals.
  17. Cover the lid with 30 prepared coals.
  18. Cook for 25 minutes.

Serve.
