Camp Fire Recipe: Baked Eggs with Spinach Hash Browns

I am always trying to come up with an idea on how to get more vegetables into my family’s diet.  The recipe below is a delicious way of introducing vegetables to breakfast.  If you want to add some meat to the dish, go ahead.  The key is to make sure it is precooked prior to adding it to the hash browns and spinach mixture.  Need some ideas?  Think about adding precooked linked or ground sausage.  Sliced ham cut into cubes is another delicious choice.  Finally, do not limit yourself to the prescribed vegetables listed in the recipe.  Bell peppers, and onions work wonderfully with the hash brown potatoes and spinach.

Camp Fire Recipe:  Baked Eggs with Spinach Hash Browns

Ingredients

Liquid or spray oil

2 cups of Southern Style hash browns potatoes

1 cup of sliced mushrooms

¼ cup of water

2 cups of baby spinach

½ cup of sour cream

½ cup of extra sharp cheddar cheese

1 teaspoon of dried dill weed

4 eggs

Steps

  1. Assemble a fire to prepare the coals.
  2. Lightly grease a 10-inch Dutch oven with liquid or spray oil.
  3. Once the coals are prepared, place the 10-inch Dutch oven in the hot coals and add the Southern style hash browns along with mushrooms and water. 
  4. Top with lid and cover with prepared coals.
  5. After 5 minutes, carefully remove the lid and stir.
  6. Place the lid back onto the Dutch oven and cook for another 5 minutes.
  7. Move 10 prepared coals to a heat resistant surface and shape into a circle.
  8. To the Dutch oven add the sour cream, dried dill weed, spinach, and ¼ cup of extra sharp cheddar cheese.
  9. Stir.
  10. Make 4 indentations into the spinach mixture with the back of a spoon.  The indentations need to be about 2 inches deep.
  11. Crack an egg and slip the egg into one of the indentations.  Repeat with all the remaining eggs. 
  12. Place Dutch oven on the circle of prepared coals and top with lid.
  13. Top the lid with 18 coals and cook for 10 to 15 minutes or until the eggs are set. 
  14. Once the yolks become solid, top with the remaining cheese and place the lid back on.

Remove the Dutch oven from the circle of coals.  Allow to sit for 2 minutes before removing the prepared coals from the lid and serving the dish.
