Camp Fire Recipe: Bacon n’ Cheese Bread

Ok, this will tell my age.  My grandparents were brought up during the Depression.  Times were hard and not so healthy dishes were made with what was available.  This is true with this recipe that my grandmother created.  It is as delicious and it is simple, while I do include so ideas on how to spice it up.  No, I do not eat this every day but when I am missing my grandmother; I pull the bacon and cheese out and bring back memories.

Camp Fire Recipe:  Bacon n’ Cheese Bread

Ingredients

Spray or liquid oil

1 loaf of French bread

¼ cup of butter

½ cup of mayonnaise

Cheddar cheese

½ teaspoon Worcestershire sauce

Tabasco sauce

1 large scallion

6 slices of bacon that has been cooked, drained, and crumbled

Steps

  1. Prepare the coals by building a fire.
  2. Lightly grease the inside of a 12 inch Dutch oven.
  3. Cut the French bread in half and then slice down the length.
  4. Grate 1 ½ cup of cheddar cheese and set aside.
  5. Finely chop scallion.
  6. Place a grilling rack above the fire.
  7. Top the grilling rack with a saucepan.
  8. Melt the butter.  Please note your really just want it softened not a liquid.
  9. In a bowl, combine the melted butter, mayonnaise, cheese, Worcestershire sauce, chopped scallion, and bacon. 
  10. Add Tabasco sauce to taste.
  11. Put French bread in 12 inch Dutch oven so that the halves are side by side. 
  12. Spread the mixture from step 9 to the top of the French bread (cut side up).
  13. Place lid on Dutch oven and carry over to a heat resistant surface.
  14. Arrange 12 prepared coals in a circle and put the Dutch oven on top.
  15. Add 22 prepared coals on top of the lid.
  16. Cook for 15 minutes.
  17. Once the time has passed, knock off the coals from the lid, and move the Dutch oven off the hot coals.
  18. Cut and serve.

Oh, this is a wonderful dish but you can change it up a bit.  Say, you have no bacon.  Not to worry, use leftover cooked sausage and top with cheddar or mozzarella cheese, depending on the type of sausage.  Looking for a little more heat, add green chilies to the mayonnaise mixture.  Finally, to really make it a gourmet treat, consider mixing in some fresh herbs such as basil.
