Camp Fire Recipe: Sweet Potato Buttermilk Biscuits

Ok, I will be frank I love sweet potatoes and cannot wait for when they are in season.  Yes, I know I can buy canned but they are never as good as fresh.  Below is a unique recipe for using sweet potatoes.  While I adore these biscuits just as they are, they are also wonderful to use as the bread for a ham sandwich.

Camp Fire Recipe:  Sweet Potato Buttermilk Biscuits

Ingredients

Liquid or spray oil

2 cups of flour

2 Tablespoons of baking powder

½ teaspoon of baking soda

1 teaspoon salt

1 Tablespoon of granulated sugar

1 Tablespoon of packed brown sugar

1/3 cup of cold butter

¾ cup of buttermilk

1 large sweet potato baked

Steps

  1. Start the fire to prepare the coals.
  2. Lightly grease the inside of a 10 inch Dutch oven with liquid or spray oil.
  3. Peel the sweet potato and mash.  You will need ¾ cup of this ingredient. 
  4. In a bowl, mix flour, salt, granulated sugar, brown sugar, baking soda, and baking powder.
  5. Cut cold butter into small pieces and place in the bowl from step 4.
  6. Cut the butter into the flour mixture with two forks or pastry blender.  Continue to cut the butter until the mixture is crumbly. 
  7. In a separate bowl, combine the mashed sweet potato and buttermilk.
  8. Once stirred, add the sweet potato mixture to the flour mixture and combine.
  9. You can roll out the dough and cut the biscuits or you can drop biscuits into the 10 inch Dutch oven by the tablespoons.
  10. How every you choose to form your biscuits, once the 10 inch Dutch oven is full add the lid to the Dutch oven.
  11. Move the Dutch oven to a heat resistant surface. 
  12. On the heat resistant surface, arrange eight coals in a circle and move the Dutch oven on top of these coals.
  13. Cover the lid with coals and cook for 15 minutes. 
  14. After the time has passed, knock off the coals from the lid and move the Dutch oven off the coals. 
  15. Serve.

As I have stated, I love sweet potatoes but if you do not have any do not discard this recipe.  You can substitute any winter squash for the sweet potatoes.  This would include butternut, and acorn squash.  When doing the substitution though, make sure to cook the squash completely prior to mashing and adding to the recipe.

Water Collection System

What do you do when you cannot find fresh water but you have found a plastic bag?  Well, the answer is simple and that is you can gather fresh water with the bag.  Yes, I said the bag.  How do you do that?  Well, it is easy and the best part is the fact that you do not have to purify the water.  Mother Nature has already done that for you.

The beginning of this process starts at night.   You find some low hanging leaves on branches that you can reach.  Once you have done that, open a plastic bag and cover the leaves with the bag and tie off.  Leave on overnight.  Transpiration will occur and moisture will collect on the inside of the plastic bag.  In the morning, the sun will hit the bag and cause the moisture to collect in the bottom of the bag.  Now, you have fresh, drinkable water.

Yes, I own waterproof boots but frankly there are sometimes that I need some help keeping my feet dry.  A found plastic bag can be a salvation when to this task.  It is simple to do and only requires you to take your feet out of the boots and wrap them each in a plastic bag.  Put your feet back in your boots and now you have dry feet. 

Food Basket

Ok, I know this is a simple one but believe it or not a plastic bag can be a very valuable tool.  It can be used as a “basket” for food gathering.  It can also be used to hold tinder and kindling while you are walking back to camp.  Finally, it can also be used to carry water to your fire to put it out. 

Every since humans went out into the world, we have left ‘”trash” behind.  As responsible campers and fellow organisms, we need to pick up and carry out what we find and take but never just look at “trash” as a waste.  Sometimes those found objects can be just what you need to save your life.

Campfire Recipe: Banana Upside Down Cake

Nothing completes a meal like a dessert.  While this recipe is easy, it does produce an elegant dish that everyone will think you spent a lot of time on.  But, frankly you will be the only one that will really know the truth.

Campfire Recipe:  Banana Upside Down Cake

Ingredients

Spray or liquid oil

1 cup of packed light brown sugar

6 Tablespoons of butter

2 to 3 bananas

1 ½ cups of flour

¾ teaspoon of baking soda

½ teaspoon of baking powder

½ teaspoon of salt

2 bananas

½ cup of buttermilk

1 teaspoon of vanilla extract

1 ¼ cups of granulated sugar

1/3 cup of butter

2 eggs

Steps

  1. Build fire to prepare the coals.
  2. Lightly grease the inside of a 10 inch Dutch oven with liquid or spray oil
  3. Cut parchment paper to fit on the inside of the 10 inch Dutch oven and lay down.
  4. Put a grilling rack above the fire and top with a saucepan that has 6 tablespoons of butter inside.  Melt.
  5. Sprinkle the 1 cup of light brown sugar on top of the parchment paper.
  6. Once the butter is melted, gently pour over the light brown sugar.
  7. Slice the 2 to 3 bananas mentioned in the beginning of the recipe.  Add to the 10 inch Dutch oven in a single layer.
  8. In a small bowl, combine the flour, baking powder, baking soda, and salt.
  9. Mash the 2 remaining bananas and place in another small bowl.
  10. To the bowl in step 9, add buttermilk and vanilla extract.
  11. In another bowl, combine granulated sugar and 1/3 cup of butter.  Beat until fluffy.
  12. Add one egg to the bowl in step 11 and beat.  Repeat.
  13. Add half of the flour mixture to the mixture in step 10.  Once mixed, add half of the mixture from step 12.  Repeat until all three bowls have been combined into one and mixed.
  14. Top the banana layer in the 10 inch Dutch oven with the batter and top with lid.
  15. Carry the Dutch oven to a heat resistant surface. 
  16. Arrange 10 coals in a circle on the heat resistant surface.
  17. Place the Dutch oven on top of these coals.
  18. Add 20 prepared coals to the lid.
  19. After 10 minutes, remove 8 coals from the lid and arrange the remaining coals in a circle around the lip of the lid.
  20. Cook for another 25 minutes.  Once that time has passed, remove the lid and insert a toothpick to check for doneness.
  21. Once done, knock off the coals from the lid and move the 10 inch Dutch oven off the coals. 
  22. Allow to cool for 20 minutes before inverting onto a plate. 

Once the cake has cooled, do not forget to remove the parchment paper prior to serving.
