Campfire Recipe: Fish Stew
Thursday, December 25th, 2014When I go camping I always want to eat healthy. While that may sound easy, it can be a challenge. Canned food and salted meat has been a staple for many campers but the salt content of these foods can cause many people health issues. To avoid this, I try to prepare as many meals from scratch as I can when I camp. Below is one of my favorite recipes, especially if I plan to fish on my camping trip.
Campfire Fish Stew
A fish fillet of your choice for each camper
4 tablespoons of olive oil
1 yellow onion
1 bulb of fennel
2 leeks
3 Tablespoons of garlic
2 Tablespoons tomato paste
¼ teaspoon saffron
1 teaspoon orange zest
1 ¼ cup chicken stock
1 ¼ cup clam juice
1 ¼ pounds of new potatoes
2 sprigs fresh thyme
4 Tablespoons butter
Lemon
Salt and pepper
Steps
- Start fire and place a rack over it.
- Place a saucepan on the rack and put 2 tablespoons of olive oil inside.
- While the oil is heating up, chop the onion, fennel and leek into thin slices.
- Once the oil is hot, add the vegetables and stir.
- While the vegetables in step 4 are cooking, chop the garlic. Once the vegetables in step 4 begin to soften, add the garlic and cook for one more minute.
- Add tomato paste, and saffron.
- Zest orange, add to saucepan and cook for another 2 minutes.
- Next, add chicken stock and clam juice. Simmer for 25 minutes.
- While the “stock” is simmering, you will need to prepare the potatoes. This starts by cutting the new potatoes into halves.
- Place cut potatoes in a bowl and mix with 2 tablespoons of oil, garlic, thyme, salt and pepper.
- Wrap potatoes in foil and place on the rack. Cook until the potatoes feel soft.
- While the potatoes are cooking, take the fish and season with salt and pepper. Place on foil and top with butter. Seal up and place on the rack.
- Cook fish until it is flaky.
- Next, strain the broth and place the liquid back into the pot. Place pot back on the fire and keep warm.
- Once the potatoes and fish are done, it is time to assemble the dish.
- To assemble the dish, take bowls and divide the potatoes into them.
- Top the potatoes with fish. Finish off the dish by adding the broth.
- Enjoy.
Do not let the simplicity of this dish fool you, it is simply delicious.
