Easy Campfire Meatloaf Recipe

Meatloaf is a great camping food, especially when you pair it with some campfire potatoes. Yes, a vegetable would make it a more balanced meal……but you can always double up on the veggies in a different meal.

What I like about making camping meatloaf is that the leftovers are great too. A slab of leftover meatloaf with a dab of ketchup on top that’s tucked between two pieces of buttered bread and cooked in a pudgie pie maker (also called a pie iron) is delicious.

CAMPFIRE MEATLOAF
Ingredients:
1 cup corn flakes, crushed (measure the cup before you crush them - I do this at home and put them in a plastic baggie to store them until I make the meatloaf)
1 pound hamburger
1 egg
1 small onion, finely chopped
1 teaspoon yellow mustard
1 tablespoon ketchup
salt and pepper to taste
cooking spray

Mix all the ingredients together. Spray a large piece of aluminum foil with cooking spray. Form the meat into a loaf and place on the foil. Wrap tightly.

Place over fire and cook for 20-30 minutes (depending on how hot your fire is) until meat is cooked through and has an internal temperature of 160 degrees F. Turn the meat packet over after the first 10 minutes of cooking.

Note: The best way to check the temperature is with an instant read thermometer.

Let the meat rest for 5 minutes before eating.

That’s the quote you’ll see on the Santa Barbara, California tourist and travel planner website. It is a beautiful area with sunny weather 300 days of the year and a moderate Mediterranean climate. It makes it a great area for outdoor activities like sightseeing, biking, hiking, water sports, and camping.

Bacon Wrapped Hot Dogs Recipe

Bacon makes everything taste better, right? Okay, so it isn’t the healthiest food in the world and neither are hot dogs, but enjoying these bacon wrapped hot dogs every once in a while is okay.

BACON WRAPPED HOT DOGS RECIPE
Ingredients:
1 package Hebrew National Hot Dogs
8 slices bacon
4 Velveeta cheese singles, each cut in 4 equal size strips lengthwise (you’ll end up with 16 strips of cheese)

Directions:
Slice hot dogs lengthwise but don’t cut completely though them. Place 2 strips of cheese in the cut part of each hot dog.

Wrap a slice of bacon around each hot dog, securing it with toothpicks.

Put the hot dogs on hot dog sticks and cook over the campfire or place on a cooking grate over the campfire to cook. Cook until the bacon is crispy and the cheese is melted.

Serve immediately.
