Pudgie Pie (Pie Iron) Stuffed French Toast Recipe

Yes, you can have stuffed french toast while camping. It’s delicious and doesn’t require a lot of fussing to make.

PIE IRON STUFFED FRENCH TOAST
Ingredients:
beaten egg (it takes about 1 egg for each sandwich)
bread
butter flavored non stick cooking spray
canned pie filling (apple or cherry are my favorites but feel free to use whatever kind you like)
powdered sugar
maple syrup or breakfast syrup

Directions:
Break the egg or eggs in a bowl. Beat well.
Generously spray the inside of the pie iron with the cooking spray.
Take one slice of bread. Dip into the egg mixture and place it in one side of the pie iron.
Top with a couple of tablespoons of your favorite pie filling.
Dip another slice of bread into the egg mixture. Place it over the top of the pie filling.
Close the pie iron and cook over hot coals or glowing firewood until the egg is set and the bread is golden brown (a couple minutes on each sides.
Remove from the pie iron and place on a plate.
Sprinkle with powdered sugar and drizzle with maple syrup or breakfast syrup and then, dig in!

Pudgie Pie (Pie Iron) English Muffin Sandwich Recipe

English muffin pudgie pies are a delicious way to start the day. And they’re easy to make too.

ENGLISH MUFFIN PUDGIE PIES
Ingredients:
(for six servings)
6 eggs
6 english muffins
salt and pepper to taste
6 slices Canadian style bacon (or ham or precooked bacon if you prefer)
6 slices American or white American cheese (Swiss is good too if you’re using ham)
non-stick cooking spray

Directions:
Crack the eggs into a bowl. Add salt and pepper. Beat well.
Split open the muffins.
Generously spray the pudgie pie maker with non-stick cooking spray.
Put one half of the english muffin in one side of the pie iron.
Top with the canadian bacon, ham, or precooked bacon.
Top with the slice of cheese.
Pour 1/6 of the raw egg mixture.
Top with the other half of the english muffin.
Close the pudgie pie maker and cook over hot coals or campfire wood until the egg is set and the english muffin is toasted on one side. Turn and cook a few minutes long to toast the other side of the english muffin.
