Pudgie Pie (Pie Iron) Breakfast Omelet Recipe

If you’re like me, pudgie pies are the best camping food there is. There’s nothing quite like cooking a delicious pudgie pie over a campfire. The only thing better is eating it. Pudgie pies aren’t just for enjoying in the evening. There’s lots of tasty ways to enjoy them for breakfast too. Here’s a great omelet recipe.

Pudgie Pie Omelets
Ingredients for each pudgie pie:
butter
1 beaten egg
salt and pepper to taste
plus your choice of any or all of the following:
grated cheese
cooked or canned potato slices
chopped onion
chopped green pepper (red, yellow, and orange are good too)
chopped tomato
thinly sliced mushrooms
bacon bits
chopped ham

Directions:
Generously butter the inside of the pie iron on both sides. Put a layer of potatoes on one side (if using). Sprinkle them with salt and pepper. Pour the beaten egg over the potato and sprinkle whatever other ingredients you are using (cheese, onion, green pepper, etc.)
Close the pie iron and carefully place on top of the hot coals or wood in your campfire (a pie iron doesn’t seal completely so you need to keep it level long enough for the egg to set up). The cooking time will vary with how hot the fire is. Check the eggs after a minute to see if they have set up. When they have, flip the pie iron over to cook the other side through - about another minute or two.

A Gift Registry For People Who Like To Camp

June is Great Outdoors Month in America

Did you know that since 2004, June has been designated, by Presidential designation, as the “Great Outdoors Month.” What does that mean? It’s really just a reminder to encourage people to get outside more and enjoy outdoor activites.

Why June? The warm summertime weather all around the country is the main reason. June is already an active recreational time for Americans with several official days and weeks related to outdoor activites.

Americans celebrate National Trails Day the first Saturday of June (June 2, 2007).

National Boating and Fishing Week is the first full week of June (June 2-10, 2007).

National Family Recreation Week is June 1-7 every year.

National Clean Beaches week is the last week of June (starting June 29 in 2007).

There’s lots of organized activities to participate in during the month of June plus lots of ways to just get outside and have some fun. Camping is the perfect way enjoy the outdoors, enjoy the fresh air and sunshine, and hopefully get some good heart pumping physical activity in too.

Make it your own personal proclamation this year to get outside more during the month of June, and all summer long, to enjoy yourself.
